It is very important to document all food safety training sessions. These records will demonstrate that employees have a level of competency necessary for the production of clean and safe food. In addition, these records will help serve as written documentation of your company’s compliance with food safety regulations such as HACCP.
At the end of each food safety training session, use a sign-off sheet to document who was involved in the training session. Have employees sign these sheets to indicate they have been fully trained and understand the given topic. Keep copies in a file along with a brief description of the training session as to what pertinent information was covered.
